Head Chef Matt has trained on 5 star Carnival Cruise ships and worked on Queen Mary II and he applies his knowledge and skills to provide perfectly cooked British food. You have to try the Lamb Shanks; his signature dish.
Each week, our ingredients are sourced from local suppliers and the renowned Billingsgate produce market in London. We’re up bright and early on a Tuesday to purchase fish for our Fish and Chip supper. We’re in conversation with the local butcher to determine the best cuts before deciding on weekly specials. With daily deliveries we know you will enjoy a delicious weekday brunch or Sunday lunch with all the trimmings.
When it comes to Sunday Lunch, we promise that you will tuck into sumptuous, tender and flavour-filled meats. This is because Matt studied at Westminster College to become a qualified Sous-vide chef. This controlled cooking method seals in all the natural juices for a succulent, mouthwatering joint.

Matt has successfully trained three catering apprentices in The Lion kitchen. He is keen to share his experience and expertise with others, so they can realise their ambitions, as he has been able to do. This is the ideal environment for the apprentices to develop their talents and all proven to be highly competent chefs in their own right.
